Getting Saucy With Chef Nicole: Muhammara

Muhammara is a rich, walnut and roasted pepper based sauce to bring Middle Eastern flair to your palate. Try using it as a replacement for ketchup for a sweet yet rich alternative. Keto-friendly option can be made by replacing traditional pomegranate molasses with low-carb yacon syrup!

This Middle Eastern staple will bring a whole new flavor profile to your meals. Try it in place of ketchup to change things up a bit!

Cuisine: Middle Eastern, Californian, Vegan

Serves: 1 cup

 

INGREDIENTS

 

  • ¾ c walnuts
  • ¼ c olive oil
  • 1 ½ Tablespoons pomegranate molasses/yacon syrup for a low-carb version
  • 1 teaspoon plain paprika
  • Pinch cayenne pepper
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • 1 cup roasted red peppers
  • 3 green onions, chopped and divided
  • Salt & pepper to taste

 

INSTRUCTIONS

 

  1. Combine all ingredients except ½ of the green onions, salt, and pepper in a blender and puree until smooth. Season with salt & pepper and stir in remaining chopped onions for texture. Use immediately or transfer to small lidded container. Keeps for 1 week in the refrigerator.
